- 1 whole chicken
- 2 cups Rice
- 500 gr. (1 lb.) natural yogurt
- 300 gr. Arabic Bread, if available.
- 100 gr. Pine seeds
- a pinch of black pepper
- a pinch of allspice
- 2-3 cloves Garlic
- 1 large onion
- some parsley for decoration
- salt to taste

Gazzewie Fatteh - the Palestinian fatteh
The Palestinian Territories: "Fetté Gazzewié" from Gaza, is served as plain rice cooked in meat or chicken broth and then flavored with mild spices, particularly cinnamon. The rice is then laid over a thin markook bread which is in turn smothered in clarified butter and topped with various meats. The musakhan, considered to be the Palestinian national dish by many, is also a fetté dish indeed

Chicken fattah

- Boil chicken with the cut onion, salt, pepper & spices
until done.
- Remove chicken and de-bone it while preserving the stock.
- Fry pine seeds until golden.
- Crush garlic cloves with salt and mix well with the Yogurt.
- Cook the Rice as usual ( See rice recipe).
- Chop the parsley and keep it aside.
- Cut bread into cubes or squares and fry until brown.
- Place fried bread at the bottom of the serving dish.
- Spread the rice on top.
- Pour some of the chicken stock on top.
- Cover all with the garlic yogurt.
- Distribute the de-boned chicken on top of Yogurt.
- Sprinkle pine seeds and chopped parsley on top.
- Place the dish in a warm oven for a couple of minutes to
warm the yogurt. Serve while warm.
